  • Assign work responsibilities for the day to culinary team members

  • Help with production; includes entrees, soups, vegetables, sauces, and other menu driven items for serving line and catering

  • Supervise culinary team. Be available to them in the production kitchen area and when when the kitchen floor first opens for lunch

  • Training and coaching team members

  • Lead others to adhering to basic policies, practices and procedures (e.g. sanitation, recipes, safety, portion control)

  • Responsible for the food cost of the unit

  • Hold culinary team meetings and effectively communicate to management all issues related to the daily operation

  • Monitor all areas of food production and correct if needed any improper food handling procedures

  • Ensure that all safety and sanitation guidelines per Health Department are followed

  • Production of records, menu management and food orders

  • Complete administration work when culinary team has catering orders complete and lunch service has been started

  • Hours of the position are 5:30AM - 2PM Monday - Friday

Qualifications

  • Culinary Associates Degree or Equivalent Experience

  • At least 6 years cooking experience, with knowledge of how to prepare soups, sauces and entrees

  • Knowledge of volume production and batch cooking

  • Proven ability in planning, organizing, ordering and production

  • Knowledge of the GFS ordering system and the ability to order using the GFS computer ordering system

  • Self-motivated, excellent communication skills with proven track record in providing excellent guest service

  • Must be able to follow verbal instructions, written recipes and instructions for menu items

  • Knowledge of the Foodservice menu system

  • Proactive team player, leads, trains and coaches others

  • Strong organizational skills

  • Ability to adapt to change in a positive manner

  • Excellent work and attendance record

  • Overtime required, flexible work schedule at times

  • Sanitation certificate preferred
